January 16-22

You may have noticed, at times, we serve purple potatoes...Suspicious? Not unlike a red potato or a white potato these purple varmint are classed as a "Waxy Potato" (High in sugar and water, low in starch) ideal for roasting and potato salad, not good for fries or Mashed potatoes.
Locally our farmers practice genetic diversity, that means they plant several varieties thus protecting their crops from diseases like the one that wiped out all the potatoes in Ireland. Potatoes are not roots they are actually tubers or underground stems, the potato plant is poisonous so are any green spots you come across (just cut it out). Potatoes come from the Andes Mountains of Peru and there are literally hundreds of different types.
So the next time you see us in dietary serving up purple spuds give them a taste....
